Description
This vibrant Veggie Tray is a delightful blend of rainbow carrots, crisp cucumbers, and rich dill dip. With quick prep and a variety of fresh vegetables, it’s an ideal choice for a healthy snack or a colorful appetizer at any gathering.
Ingredients
Scale
- carrots (rainbow carrots if possible)
- celery
- cucumber (english cucumber is best if you can find it)
- snap peas
- red, orange, or yellow bell peppers
- broccoli (steamed broccoli or blanched broccoli is best)
- radishes
- cherry tomatoes (multi-colored, if possible)
- olives
- 1 cup full fat greek yogurt (or sour cream; see notes)
- 1 cup mayonnaise
- 2 tablespoons dried dill
- 1 1/2 tablespoons dried minced onion
- 1/2 teaspoon garlic powder
- 1/4 teaspoon kosher salt
Instructions
- Slice all the vegetables appropriately. Prepare the broccoli by either steaming or blanching it and then sprinkle with salt for enhanced flavor.
- In a large bowl, combine the ingredients for the dill dip. For the best flavor, refrigerate the dip for 30 minutes (it can be stored in the fridge for up to 1 week).
- If you prefer, prepare an additional dip like hummus or another variant.
- Serve by placing the dips in small shallow bowls and arranging the sliced vegetables around them. Offer immediately.
Notes
For added flavor, let the dipped vegetables sit for a few minutes before serving to allow the flavors to mingle.
Store any leftover dip in an airtight container in the refrigerator for up to a week.
Feel free to mix and match the vegetables based on what’s in season or what you have on hand.
