Description

This Velveeta Queso boasts an irresistible flavor with a creamy texture, combining sausage, pepper jack, and a hint of spice. Perfect for gatherings or a cozy night in, its simple prep makes for a delightful dip that everyone will love.

Ingredients

Scale
  • 1/2 lb sausage or chorizo (cooked and crumbled)
  • 12 oz Velveeta (cubed)
  • 8 oz pepper jack cheese (cubed or shredded)
  • 2 oz cream cheese (softened and cubed)
  • 1 (10 oz) can Rotel (or 1-1/4 cups salsa)
  • 1/2 cup onion (finely chopped)
  • 2 jalapeños (diced, seeds removed for less heat)
  • 2 cloves garlic (minced)
  • 1/4 cup milk (optional, for thinning)

Instructions

  1. In a large skillet, cook the sausage or chorizo over medium heat until browned and crumbled. Drain any excess grease if necessary.
  2. Add the chopped onion and jalapeños, cooking for 3 to 4 minutes until softened. Stir in the garlic and cook for an additional 30 seconds until fragrant.
  3. Reduce the heat to low and add the Velveeta, pepper jack, cream cheese, and Rotel (including juices).
  4. Stir frequently until all cheese melts and the queso is smooth and creamy.
  5. If a thinner consistency is desired, gradually stir in milk until the queso reaches your preferred thickness.
  6. Serve immediately with tortilla chips or your favorite dippers.

Notes

For added flavor, consider using spicy sausage.
This dip pairs well with fresh veggies for a healthier option.
Store leftovers in an airtight container; reheat gently.
