Description

- 1 medium onion, peeled and cut into chunks
- 2 garlic cloves, peeled
- 1 lb ground beef (85/15)
- 1 tablespoon tomato paste
- 2 tablespoons greek yogurt (full-fat or nonfat both work)
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/4 teaspoon red pepper flakes (optional)
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 2 to 3 tomatoes, quartered
- 2 to 3 green peppers
- 1 tablespoon olive oil
- 1/4 teaspoon kosher salt
- 1/8 teaspoon black pepper
- 4 tablespoons unsalted butter
- 2 tablespoons tomato paste
- 1/4 cup hot water
- 1/4 teaspoon kosher salt
- 1 cup full-fat yogurt
- 2 garlic cloves, minced
- 1 to 2 tablespoons lemon juice
- salt and pepper, to taste
- 1 tomato, thinly sliced
- 1 small red onion, thinly sliced
- 1 cup flat-leaf parsley, finely chopped
- 1 tablespoon olive oil
- 1 to 2 tablespoons lemon juice
- salt and pepper, to taste
- 4 pieces pita bread (or lavash for dürüm-style wraps)
Instructions
- Preheat the oven to 400°F (204°C).
- In a food processor, combine onion, garlic, tomato paste, and Greek yogurt; pulse until finely chopped or pureed.
- Transfer the mixture to a large bowl. Add the ground beef, cumin, paprika, red pepper flakes, kosher salt, and black pepper. Mix until fully combined using clean hands.
- Divide the meat mixture into three equal portions. On a large sheet of parchment paper, place one portion in the center and cover with another sheet. Flatten into an even rectangle using a rolling pin or hands.
- Remove the top parchment sheet and tightly roll the meat, starting from the closest side, into a log using the parchment paper to guide it. Place on a large sheet pan and repeat with remaining portions.
- Add quartered tomatoes and green peppers to the sheet pan. Drizzle with olive oil and season with salt and pepper.
- Bake everything in the oven for about 20 minutes, until the meat is cooked and the vegetables are roasted.
- Remove the pan from the oven. Carefully unroll the meat logs and tear into large pieces.
- For the red sauce, melt butter in a small saucepan over medium heat. Stir in tomato paste and hot water until smooth; bring to a boil and then remove from heat.
- To make the garlic sauce, mix all garlic sauce ingredients in a bowl and taste to adjust flavor to preference.
- For the salad, mix all salad ingredients in a bowl and adjust seasoning to taste.
- To assemble the dürüm, lay a piece of lavash on a cutting board, spread with tomato sauce, then add cooked meat, roasted tomatoes and peppers, and salad.
- Drizzle with garlic sauce, roll tightly from the bottom, tucking in ingredients to form a wrap. Repeat with remaining lavash, slice in half, and serve.
Notes
Make sure to roast the vegetables until they are tender for the best flavor.
Use fresh herbs in the salad for extra flavor and freshness.
Feel free to adjust the spice level by adding more or less red pepper flakes.
