- 1 1/2 pounds lean ground beef
- 1 1/2 cups diced onion
- 3 garlic cloves, minced
- 1 tablespoon tomato paste
- 1 1/2 tablespoons Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1 15 ounce can tomato sauce
- 1 15 ounce can diced tomatoes
- 2 1/2 cups beef stock
- 1 1/2 cups elbow macaroni, uncooked
- 1 cup shredded cheddar cheese
- chopped parsley, optional
Instructions
- In a large, deep skillet, brown the ground beef over medium high heat until no longer pink.
- Transfer the cooked beef to a bowl and drain excess fat, leaving 2 tablespoons in the skillet.
- Return the skillet to the heat and add the diced onion; cook for 5 minutes until softened.
- Stir in the minced garlic and cook for an additional minute.
- Add the tomato paste, Italian seasoning, garlic powder, onion powder, and smoked paprika; stir well and cook for 1-2 minutes until the paste darkens.
- Return the beef to the skillet, adding the tomato sauce, diced tomatoes, and beef stock.
- Bring the mixture to a boil before adding elbow macaroni.
- Cover and reduce heat to low, simmering for 15-20 minutes until the macaroni is tender and liquid is absorbed, stirring occasionally.
- Remove the lid and stir in shredded cheddar cheese until melted.
- Serve hot, garnished with chopped parsley and Parmesan cheese, if desired.
Notes
Feel free to add vegetables like bell peppers for additional nutrition.
